Snickerdoodles, Christmas style

So for the past week or so I have been wanted to make Christmas cookies and only Christmas cookies. This tends to be a slight "problem" since Brad and my definition of a good cookie tend to differ. I like mine a bit crispy where he likes his more chewy. His all-time favorite cookie are Snickerdoodles which to me aren't Christmas-y at all. However, in wanting to do something special for him I remembered that I had a Christmas sugar blend from Target that I had found in the dollar section. So instead of using plain white sugar for the cinnamon sugar blend, I used the green, red, and white sugars and viola! Christmas cookies :o)

Snickerdoodles

Prep Time: 25 min
Chill: 1 hr
Bake: 10 min per batch
Oven: 375 degrees F

Ingredients
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1/4 tsp baking soda
  • 1/4 tsp cream of tartar
  • 1 egg
  • 1/2 tsp vanilla
  • 1 1/2 cups all-purpose flour
  • 2 Tbsp sugar
  • 1 tsp ground cinnamon

Directions
1. Add the 1 cup sugar, baking soda, and cream of tartar. Beat until combined, scraping sides of bowl occasionally. Beat in egg and vanilla. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour. Cover and chill in the refrigerator for 1 hour.

2. In a small mixing bowl combine the 2 tablespoons sugar and the cinnamon. Shape dough into 1-inch balls. Roll balls in the sugar-cinnamon mixture to coat. Place 2 inches apart on an ungreased cookie sheet.

3. Bake in a 375 degree F oven for 10 to 11 minutes or until edges are golden brown. Transfer cookies to a wire rack; cool. Makes about 36 cookies.
